My rats aren't eating carbohydrates. Got tips?

I've tried brown rice, white rice, oats, tricolor pasta, baby biscuits, wheat cereal, organic cereal and bread for their carbohydrate intake.But they don't eat them. They only eat veggies, cheese, chocolate and a little fruit. I don't have access to lab blocks. They are lethargic and sleeping more often, although I don't think it's a case of them not wanting to eat (since one of them keeps biting like she's hungry) but more of not liking the food. What do you feed your rats (for carbohydrate)?
I am giving them chocolate because they won't eat other things (too much veggies make them have watery poo which is generally not a good thing). I've tried peanut butter and cooked pasta before, nope, they don't touch it... They used to eat their oats and pasta until 2 weeks ago.

Ummm, Just a question, isn't chocolate not great for rats? Like maybe it should be given as more of an infrequent treat, though it isn't poison for them. Something about the cheese to. Its more of a treat for once in a while, as most rodents become lactose intolerant once they reach adulthood. So we have limited your rat's diet to veggies and fruit. Do you have a local pet store? They do have pre-mixed rat food, that has the proper amount of carbohydrates. Try searching online for lab blocks.
